About Republic

Republic Chophouse is an independent steakhouse in Green Bay, serving dinner. Guests come for an evening worth remembering, and the service must match the food: knowledgeable, attentive, and polished without being stiff.

The Role

As a Server Assistant / Busser, you support Servers on the dining-room floor through a polished, multi-course dinner. Clear and reset tables, maintain dining-room supplies, and detail each table from the tabletop to the floor.

Attention to detail is essential. Clean glassware, polished silverware, accurate resets, and a tidy floor help guests feel looked after and give Servers time to focus on their tables. Bring energy, reliability, and a willingness to learn; prior restaurant experience is helpful, but not required. We teach you the house standards.

What You Own

•    Clearing and resetting. Remove used dishes and tableware using a tray, scrape and sort them in the dish area, and empty dining-room bus tubs. Clean and sanitize tabletops, clean the floor beneath and around each table, and reset accurately to house standards. Update table status in OpenTable when the reset is complete.

•    Guest support and timing. Move efficiently and quietly through the dining room. Relay requests you cannot handle to the Server or manager and follow through. Let the Server lead meal pacing and guest-service decisions.

•    Dining-room supplies. Keep dining-room stations stocked with clean tableware, glassware, linens, and assigned supplies. Refill dining-room ice as needed. Collect, wash, sanitize, polish, and put away glassware as assigned. Roll linens, polish silverware, and report damaged items or low supplies.

•    Cleanliness and safety. Check restrooms during the shift, replenish supplies, and clean as needed. Address spills, food debris, trash, and broken dishes promptly using house safety procedures. Keep dining-room walkways clear and report hazards you cannot safely resolve.

•    Team coordination. Coordinate with Servers and Hosts about ready tables, service needs, and delays. Know table numbers and ask when a request is unclear. Divide floor responsibilities when more than one SA/Busser is working. Bar stocking and bartender support belong to the Barback.

How the Day Runs

Arrive ready. During service, anticipate clearing, resets, dining-room ice, and stocking needs rather than waiting for each task. Complete assigned floor closing work and leave tables and stations ready for the next service. Check with the manager on duty before leaving.

Who Runs the Floor

You report to the Assistant General Manager. Work with the manager on duty: the Floor Manager, AGM, or GM leading that shift.

Coordinate floor support with Servers and Hosts. Bring “Absolutely, no problem” hospitality to your work and ask the manager on duty to resolve competing priorities. Report guest concerns and requests outside your authority promptly; the manager on duty decides voids, discounts and comps.

How This Role Is Measured

•    Table readiness. Tables and the surrounding floor are clean, resets are accurate, and table status is updated in OpenTable. Speed does not come at the expense of sanitation or guest comfort.

•    Awareness and follow-through. Clearing, glassware, linen, silverware, and supply needs are noticed before they delay floor service. Guest requests reach the Server or manager and are followed through.

•    Cleanliness and safety. Dining-room stations, restrooms, and walkways stay clean, stocked, and safe. Trays, dishes, glassware, and cleaning supplies are handled correctly.

•    Readiness and teamwork. Arrive prepared, follow directions, share the floor workload, and finish assigned side work. Accept coaching and apply it on the next task.

Schedule and Presence

This role supports dinner service, including evenings, weekends, and holidays as scheduled. Arrive on time, be ready when you arrive, and complete your assigned closing work. Follow the dress, grooming, and footwear requirements outlined in the employee handbook throughout your shift.

What We’re Looking For

•    Work ethic and initiative. Stay engaged through a busy shift, notice what needs doing, and complete tasks without reminders. Restaurant experience is helpful; reliability and willingness to learn matter most.

•    Organization and friendliness. Prioritize requests, listen carefully, and ask for help before a small problem becomes a service delay. Treat guests and coworkers courteously under pressure.

•    Care with details. Learn table settings, table numbers, OpenTable table-status updates, sanitation procedures, and safe tray handling. Keep clean and dirty items separate and follow house procedures consistently.

•    Physical requirements. Able to stand and walk through service, bend and reach, and safely carry trays, dishes, bus tubs, ice, and supplies, with or without reasonable accommodation. Use safe loads and ask for help when needed.

What We Offer

•    Earning opportunity. Historical total earnings average approximately $18 per hour, including base wages and recorded tips. Actual earnings vary by shifts worked, guest volume, and the applicable tip-out arrangement; historical averages are not guaranteed.

•    Retirement and health. 401(k) eligibility after 90 days, with a 3% match when you contribute 6% or more. Health insurance for full-time employees working 30 or more hours per week, with a 50/50 premium split, individual or family coverage, and an HSA option, subject to plan terms.

•    Learning and dining. Training in house service standards, tuition reimbursement up to $500 per semester for eligible hospitality or business courses, and a 25% employee dining discount.
Compensation: $7.25 per hour

U.S. Equal Opportunity Employment Information (Completion is voluntary)

We are an equal opportunity employer and all qualified applicants will receive consideration for employment without regard to race, color, religion, sex, national origin, disability status, protected veteran status, or any other characteristic protected by law.

You are being given the opportunity to provide the following information in order to help us comply with federal and state Equal Employment Opportunity/Affirmative Action record keeping, reporting, and other legal requirements.

Completion of the form is entirely voluntary. Whatever your decision, it will not be considered in the hiring process or thereafter. Any information that you do provide will be recorded and maintained in a confidential file.

Form CC-305
OMB Control Number 1250-0005
Expires 4/30/2026

Why are you being asked to complete this form?

We are a federal contractor or subcontractor. The law requires us to provide equal employment opportunity to qualified people with disabilities. We have a goal of having at least 7% of our workers as people with disabilities. The law says we must measure our progress towards this goal. To do this, we must ask applicants and employees if they have a disability or have ever had one. People can become disabled, so we need to ask this question at least every five years.

Completing this form is voluntary, and we hope that you will choose to do so. Your answer is confidential. No one who makes hiring decisions will see it. Your decision to complete the form and your answer will not harm you in any way. If you want to learn more about the law or this form, visit the U.S. Department of Labor’s Office of Federal Contract Compliance Programs (OFCCP) website at www.dol.gov/ofccp.
